Chilli Gobi (Chilli Cauliflower) Recipe

Ingredients:

Cauliflower (Gobi)
500 Gm (Grams)
Separated Cauliflower Florets

Red Chilli Powder (Lal Mirch Powder)

Water (Paani)
as needed to make batter

Chilli Gobi Recipe or Chilli Cauliflower Recipe is another popular dish recipe from Chinese cuisine. It’s so awesome that it has become one of the most popular snacks items served in marriages and parties in Asian continent. If you have seen Chilli Gobi in marriages, parties or in some good restaurants and if you really thought it must be difficult to prepare such Chilli Gobi at home, then you may be wrong. Believe me its not that much difficult to make Chilli Gobi exactly same or even better in taste as you might have eaten in that party. Let’s see the preparation steps for my favourite Chilli Gobi Recipe or Chilli Cauliflower Recipe.

Preparation Steps for Chilli Gobi (Chilli Cauliflower) Recipe

So let’s prepare the Chilli Gobi or also called Chilli Gobhi in two simple steps. In step 1 below we will fry the Cauliflowers coated in batter. And then in second step we will finalize the recipe.

Step 1 – Fry the Cauliflower Florets For Chilli Gobi Recipe

To fry Cauliflower florets, we will first prepare a batter of All Purpose Flour and Corn Flour and then will fry florets in that batter. See the steps below.

  1. Clean and wash the Cauliflower florets properly.

  2. Boil 1.5 Liter of water with 1/2 Tsp of Salt added. When the water comes to boil, add Cauliflower florets in boiling water and keep for 2 minutes. We just have to half cook (50%) the Gobi, not full. So after 2 minutes when the Gobi is 50% cooked, take them out of boiling water and immediately add to cold water. If you do not immediately add to cold water, the Cauliflower will remain cooking inside, and we do not want that.

  3. Now make a thick consistency batter with batter ingredients (All Purpose Flour, Corn Flour, Red Chilli Powder, Salt, Black Pepper Powder and Water). Add Water in small chunks as need so you do not loose the thick batter consistency.

  4. Now heat the enough refined Vegetable oil in deep and heavy bottom skillet. When the Oil is hot, take a cauliflower floret, dip it in batter, gently shake to remove extra batter from it and then gently put it in hot oil.

  5. Do this with other Cauliflower florets too. Do not overcrowd the skillet but give them space to fry properly. Fry at medium flame for 3 to 4 minutes. Flip in between so florets are cooked from both sides.

  6. When the florets are fried well to golden in color, take them out of oil and keep aside. Do not overcook.

  7. When all Cauliflower florets are fried, then switch off the gas and remove excess oil from Skillet. Just leave around 1 TBsp of oil in skillet.

  8. In the meantime, dissolve 1.5 Tsp of Corn flour in half cup of water properly and keep this Corn Flour water aside for later use.

Step 2 – Lets Make It Now

  1. Now in remaining oil add diced Onion, chopped Ginger and sliced Garlic, fry for few seconds and then add chopped Green chillies and diced Capsicum. Fry for 3 to 4  minutes until Onions are soft. Do not overcook. Remember, we do not have to cook the Capsicum 100% in the final dish but it should remain only around 80% cooked to give it’s crispy, juicy quality. So do not overcook.
  2. After 3 to 4 minutes of fry when Onions are soft (translucent in color) add all the sauces i.e. Red Chilli Sauce, Tomato Sauce, Soya Sauce, White Vinegar (Safed Sirka) and 1/4 tsp of Sugar (optional).
  3. Fry on high flame for 1 minute after adding sauces and then add the Corn flour water that we had prepared earlier. Mix well and stir fry for 1 more minute.
  4. Then add the other remaining ingredients i.e. Red Chilli Powder, Coriander Powder, Black Pepper Powder and 1/2 Tsp of Salt. Fry at high flame for 2 minutes and then add the fried Cauliflower florets.
  5. Mix well and stir cook for 2 more minute. Make sure that the florets are well coated with sauces.
  6. And your Chilli Gobi is ready, garnish with spring onion, coriander leaves and serve hot. This chilli Gobi can either be used as snacks or you can eat with Roti or Fried Rice.

If Red Chilli Sauce is not available, You can also use Red Chilli Paste instead. To make Red Chilly Paste, add 1 Tsp of White Vinegar to 2 Tsp of Kashmiri Chilly Powder. But please note that if you are using Red Chilly Paste, do not use Red Chilli Powder then.
