How to make zafran biryani

Please suggest me the best way to cook Zafran biryani. Also, give me a detailed description of the ingredient that makes zafran biryani tastier.

Hi Roohi!

I hope you know why it is called Zafran biryani? Because it adds a large pinch of saffron also called Kesar. In the urdu language, Kesar is called zafran.

Let's have a look at the ingredients to make zafran biryani:-

For half kg chicken you need

2 cup rice,2 onions, ½ cup of curd,2 bay leaves, 1 cinnamon stick,3-5 cloves, 2-3 green cardamoms,1star anise, a tsp of cumin seeds and turmeric, chili powder, mint leaves, 2-3 tablespoons of lemon juice, 1 tsp of ginger garlic paste, and chopped coriander leaves.

To make Zafran biryani

You need to cook rice for 10 minutes. Add lemon juice and salt. Mix it well with rice and drain the excess water.

Coat your chicken pieces with the paste of turmeric, chili powder, curd, and coriander powder. Let the chicken marinate for 15-20 minutes.

Now, take a pan on medium-high flame. Add oil and sauté cardamoms, bay leaves, cloves, cinnamon sticks, and star anise for a few seconds.

Add chopped onions, ginger-garlic paste, mint leaves and saute till it turns brown color.

Add marinated chicken to the pan and mix it well with all the ingredients. Add a cup of water and cook for another 10-15 minutes.

Now it's time to mix the rice and the chicken to make Zafran biryani:-

In a deep pan spread the layer of rice, then chicken masala.

Spread the layer of zafran mix milk.

Repeat the process till the rice and chicken masala comes to end.

Now, Seal the edges with the kneaded dough so that aroma of Zafran and other ingredients gets fully absorbed. Cook on a low flame for 10-15 minutes.

Serve it with salad and raita.
