Biryani Masala Powder

Step 1 – Cut the Baingan (Eggplant) in Rectangular Fingers Shape For Baingan Fry

Take a large sized Baingan (Eggplant, Brinjal), peel it and cut into 2 to 3 inch long Baingan fingers. The Baingan (Eggplant) fingers thickness should be about ½ inch.

Step 2 – Prepare Powder Coating

Step 3 – Let’s See How to Make Crispy Baingan Fingers (Egg Plant Fry Fingers, Brinjal Fry Fingers)

Time needed: 30 minutes

So as we have the raw Eggplant fingers and the powder coating ready, let’s go ahead and see how to make our crispy Eggplant fry fingers (Baingan Fry). Follow these simple recipe instructions to make these yummy and crispy Brinjal fry fingers.

  1. Take one Baingan finger and powder coat it with the powder coating mixture that we had prepared. Keep it aside in a plate.

  2. Repeat same process with all the Eggplant fingers and keep all the powder coated Baingan fingers aside in a plate.

  3. Whisk two raw Eggs and keep it in a wide mouth pan or plate and keep it handy with you while frying the fingers.

  4. Take 1 bowl of Breadcrumbs in a wide plate and keep it handy too.

  5. Then heat enough Oil for deep fry in a non-stick frying pan at medium flame.

  6. When Oil is hot, take one powder coated Brinjal finger and dip it in whisked Egg so it is well coated with Egg contents from all around.

  7. Then put this Egg coated Eggplant finger in Breadcrumbs plate and make a light Breadcrumb coating all-around of it.

  8. Then immediately gently add this Breadcrumb coated Eggplant finger in hot Oil.

  9. Repeat this process with all the Baingan Fingers (Egg Plant Fingers). Do not overcrowd the pan, but keep some space between them in pan.
    (Remember to fry at medium flame, not at high flame so that your Baingan fingers outer covering shouldn’t burn and the Baingan (Eggplant) should be cooked well from inside.)

  10. When fried from one side for about 3 to 4 minutes at medium-low flame, flip them to fry from other side.

  11. Let the Eggplant fingers fry from other side too for 3 to 4 minutes. Do not overcook.

  12. When your Eggplant fingers are fried well, then take them out on a tissue paper or kitchen towel to absorb excess oil.

  13. Repeat this process with all the remaining Eggplant Fingers (Brinjal Fingers).
