The delicacy of Bangladeshi recipes is affected by the Bengali cuisine heavily. This cuisine includes fish, dals (pulses) and egg recipes together with vegetable curry. This cuisine has a unique strong taste because of a good amount of spices or herbs like cardamom, coriander, cumin, cinnamon, mustard and an assortment of garam masala. Rice, whole ground wheat flour (gehun atta), pulses/lentils are the staple ingredients in Bangladeshi recipes. The food in this cuisine varies from very sweet to extremely spicy food. Variety of fruits and vegetables are used in many dishes. Mutton and chicken is the favorite food item in Bangladeshi cuisine. Not only meat but the migratory birds like duck and koel are also cooked in winters. Mustard oil is the cooking medium but refined vegetable oil and groundnut oil is also used these days. Kasundi is very popular in Bangladeshi cuisine; it is a dipping sauce with pungent smell.
