Everybody loves Spaghetti. Its tasty, goes with almost any type of sauce and it’s ready within no time. This is the most popular type of pasta which originated in Italy but it now enjoyed throughout the world. The key to perfect Spaghetti is to cook it in a very large saucepan. Fill the saucepan with water then toss in a handful of salt. The water should be quite salty in order for the spaghetti to absorb it. Then boil the spaghetti until it is soft but still has some bite to it. This is what the Italians call al-dente. Follow the instructions on the packet if you are unsure as different brands have different cooking times. This Spaghetti dish is perfect for a hot day as it is light as it is refreshing. This is one of those recipes that you can adapt to whatever vegetables are available and in season at the time.
Ingredients for Vegetarian Pasta Recipe
  1. Unsalted Butter - 50 grams
  2. Garlic Clove - 1, crushed
  3. Spinach - 100 grams
  4. Fresh Peas - 150 grams
  5. Asparagus - 200 grams, blanched, cut into bite
  6. Frozen Soya Beans - 100 grams defrosted
  7. tagliatelle or pasta of your choice - 450 grams cooked;
  8. Lemon - 1, juice and zest
  9. Mint - ½ teaspoon, chopped
  10. Basil - ½ teaspoon, chopped
  11. Dill - ½ teaspoon, chopped
  12. Parsley - ½ teaspoon, chopped
  13. salt and freshly ground black pepper - 1 teaspoon each
  14. Pasta Cooking Water - 2 tablespoons

Preparation Steps for Vegetarian Pasta Recipe
  1. Heat the butter in a saucepan and fry the garlic gently for 1 minute.
  2. Add the spinach, peas, asparagus and soya beans and cook until the spinach starts wilting.
  3. Add the pasta and 2 tablespoons of the pasta cooking water and stir to combine.
  4. Stir in the herbs, lemon juice, zest, salt and pepper.
 

To serve

  • Extra Virgin Olive Oil
  • 25 grams hazelnuts, toasted and roughly chopped
  • Parmesan Shavings,

Sprinkle the hot pasta with the parmesan shavings. Top with the hazelnuts and drizzle all over with a good quality Olive Oil.
