Vegetable Samosa, a very common fried Indian snacks. Almost everybody is fond of vegetable samosa. Vegetable samosa is prepared by stuffing the vegetables in covering of flour dough and then frying in hot oil. Samosa with hot tea can make your rainy day a perfect rainy day. Vegetable samosa generally is a fried or baked triangular pastry filled with the stuffing prepared from potatoes, peas etc. This vegetable samosa is popular fried version of it; see the preparation method of vegetable samosa.
Ingredients for Vegetable Samosa Recipe
  1. FOR SAMOSA COVERING - ====================
  2. All purpose flour (Maida) - 1 cup
  3. Oil - 2 tsp
  4. Water - enough to knead dough
  5. Carom Seeds (ajwain) - ¼ tsp (optional)
  6. Salt - a pinch
  7. FOR SAMOSA STUFFING - ====================
  8. Potatoes - 4 nos (boiled, peeled and mashed)
  9. Green Peas - ½ cup (boiled)
  10. Red chili powder - to taste
  11. Garam masala - ½ tsp
  12. Ginger - ½ tsp, crushed
  13. Green Chilies - 1
  14. Coriander leaves - 1 tsp, finely chopped
  15. Raisins - 2 tsp (optional)
  16. Dry Mango powder (Amchur) - 1/2 tsp (optional)
  17. Salt - to taste

Preparation Steps for Vegetable Samosa Recipe
  1. Let’s prepare the dough for cover first. Mix all the ingredients of COVER except the water.
  2. Now, add a little water at a time. Pat and knead well for several times into a soft pliable dough.
  3. Your dough for cover of vegetable samosa is ready, Cover the dough with damp (wet) cloth and keep it aside for 15 minutes.
  4. Lets prepare the stuffing now. Take mashed potatoes in a bowl and add chilli powder, salt, mango powder, garam masala, green chillies and ginger. Mix well.
  5. Now add boiled green peas, raisins and coriander leaves and mix well. Your stuffing for vegetable samosa is ready, keep it aside.
  6. Divide the dough into small balls. Now take one dough ball and roll it into a 4 to 5 inch diameter round chapatti. Do not make it too thin.
  7. Cut the chapatti into two parts so that you would have two semi=circle chapattis from one circle chapatti.
  8. Now take one semi circle chapatti and fold it like a cone. Use water to seal the joints of cone.
  9. Add enough filling (above prepared stuffing) in the cone and seal the third side using a drop of water.
  10. Now, heat the enough oil for deep fry in a deep skillet (kadahi) and deep fry the vegetable samosa on medium flame till the samosa are golden brown
  11. Your vegetable samosa are ready, serve the vegetable samosa hot with your favorite chutney, tamarind chutney or tomato saus.
