Vegetable Biryani, generally known as veg biryani is a famous Indian recipe from the land of Punjab. Punjabi vegetable biryani is very tasty and very popular veg biryani all around the world. Below are the steps for preparation of vegetable biryani.

Uncooked Rice

1.5 cups

Boiled mixed vegetables

2 cups (i.e. chopped cauliflower, carrots, potatoes, green peas)

Coriander Leaves

1 tsp, chopped

Onions
-
2 nos, sliced

Saffron
-
2 pinches, dissolved in a little water

Tomatoes
-
Tomatoes – 3 nos, finely chopped

Raisins
-
2 tsp
-
Cashew nuts
-
2 tsp, broken into pieces

Capsicums
-
2 nos, sliced
-
Ghee
-
4 tsp
-
Milk
-
¼ cup

Salt

to taste

Preparation Steps for
Vegetable Biryani Recipe

Wash the rice properly changing the water few times until the water is clear. Now, boil the washed rice in pan with enough water. When cooked, drain the excess of water. Make sure that rice are not over cooked.

Now, add the salt and the saffron water to these cooked rice and mix well gently.

Now, in a frying pan, take ghee and heat on medium flame. When the ghee is hot, add onions to it and fry till the onions are golden brown.

When the onions are golden brown, take them out of the ghee, keep aside.

Now, in the same remaining ghee, add raisins and the cashewnuts and fry for 10 – 15 seconds and take out of the ghee immediately. Keep aside for garnish.

Make a paste of the PASTE INGRENDIENTS i.e. Garlic Cloves (6 nos), Ginger pieces (1 tsp), Cardamoms (3 nos), Green Chilies (4 nos), Cloves (3 nos), Poppy Seeds (1 tsp), Cinnamon (2 sticks), Turmeric Powder (1/2 tsp), Chili Powder (1/2 tsp), Onions (2

Now, in the same ghee, add above prepared paste and fry it for 3 to 4 minutes.

After 3-4 minutes, add the capsicum and tomatoes to this paste and fry again for 2 to 3 more minutes.

Now, add the boiled vegetables and coriander leaves. Cook for few minutes.

Now, take a baking bowl and put 2 tsp of ghee at the bottom of it.

Arrange the rice and vegetables in few layers one above another. Make sure that the bottom layer and the top layer should be of rice.

Now, take the milk and sprinkle on the top.

Cover the baking bowl and bake it in a hot oven at 200 degree C for 15 to 20 minutes.

After 15-20 minutes, take the baking bowl out of the own and garnish with fried cashew nuts, onions and raisins
Your vegetable biryani (veg biryani) is ready, serve hot.
