When having a dinner party, there is nothing better than having something that can be easily prepared beforehand. This very quick tomato and basil tart is exactly that. It tastes so good that you can easily brag to your friends how you spent hours in the kitchen preparing the puff pastry from scratch and grinding the pesto with your hands. This recipe is so easy to follow that you don’t have to be a pro in the kitchen to make the tart tasty. The key to making this dish a hit is to use the best quality pesto that you can afford. Or alternatively use your blender to make a pesto from scratch as it will only take you 10 minutes. It makes for a great, light, first course or a snack. You can use herb salad leaves, mixed salad leaves or arugula. I sometimes even top it with a bit of cheese to make it more interesting.

Ready Made Puff Pastry

1 sheet

ReadyMade Basil Pesto

1 jar

Ripe Tomatoes

5 sliced

Salt and freshly Ground Black Pepper

to taste

Salad Leaves
-
1 bag

Virgin Olive Oil
-
4 tablespoons

Lemon Juice
-
2 teaspoons

Preparation Steps for
Tomato and Basil Tart Recipe

Preheat the oven to 180°C.

Place the pastry onto a baking tray. Leaving a 2 cm border around the edge, prick the pastry all over with a fork.

Spread the pesto on the pastry being careful not to get it onto the border. Place the tomatoes on top of the pesto. Season with salt and pepper and bake in the oven for 20 minutes or until the pastry is nice and crisp and the tomatoes soft.

Dress the salad leaves with 2 tablespoons of olive oil and lemon juice.

Place the salad onto a plate and place a slice of the tart in the centre. Drizzle all over with olive oil and serve.

You can use any type of pesto other than basil if you prefer.
