Because Swahili people live at the coast there is a lot of seafood in their cuisine. Most dishes are very simple so as not to affect the delicate flavor of this white meat. Fish dishes from Swahili cuisine are lightly spiced and tend to be cooked in a coconut or tomato based broth. The whole stew is then served alongside a Tomato Salsa called Kachumbari, Coconut Rice, Chapattis or the traditional Ugali (polenta). Use whatever type of fish you have available for this recipe. But if a firm textured fish is used, then the cooking time will have to be added by a few minutes. I suggest you use red snapper or something similar. Once you have mastered this basic recipe you can jazz it up the way u like. For a different variation, try using this same recipe to cook your favorite shell fish such as prawns.
