Spinach rice is very healthy and colorful dish. Spinach has plenty of health benefits. It is full of vitamins, fiber and anti-oxidants. A phytonutrient is a substance, present in spinach which will slow down the procedure of cell division in stomach as well as in skin and protect against Cancer. Spinach will also help to fight against aggressive prostate cancer. Generally many people don’t like to eat Spinach as plain, so today by seeing these much benefits of spinach we are going to make very tasty and colorful spinach rice. Apart from spinach you can use chopped onions, chunks of paneer (cottage cheese), tomato, green peas and spices like cloves, bay leaf and cinnamon stick. Spinach also has good amount of vitamin K and excellent source of calcium. Spinach growing countries are: Afghanistan, India, Paris, Spain, Algeria, California.
Ingredients for Spinach Rice Recipe
  1. Rice (preferably basmati rice) - 2 cups
  2. Spinach - 2 cups
  3. Coriander leaves - 2 Tbsp
  4. Onion - 1/2 cup
  5. Peas - 1/2 cup
  6. Cumin seeds - 1 tsp
  7. Cumin powder - 1/4 tsp
  8. Oil - 4 Tbsp
  9. Garlic paste - 1 tsp
  10. Ginger paste - 1/2 tsp
  11. Green chilies - 2
  12. Salt - 2 tsp
  13. Garam masala (powdery mixing of all Indian spices) - 1 tsp

Preparation Steps for Spinach Rice Recipe
  1. Wash basmati rice properly. Soak them in to water for 20 minutes. Chop the garlic, ginger, onions and green chilies. If you want you can make paste of minced ginger, garlic and chilies.
  2. Clean the spinach with water well and take out all the sand grains. Cut spinach roughly.
  3. Put a pressure cooker on a medium flame and add oil. Once oil heated properly add cumin seeds. When they start sparkling, add the onions and sauté till they turn translucent. Add the ginger, garlic, green chili paste and sauté for 3 minutes.
  4. Add spinach, chopped coriander leaves and green peas. Add salt, garam masala and cumin powder as per your choice.
  5. When the spinach wilts properly, add the soaked rice. Add four cups of water and mix all the ingredients together.
  6. Close the pressure cooker and cook until the rice is done. Place it in plate. Serve warm with raita.
 

Additional Tips:

  1. The key to cooking any leafy green, especially spinach, is to not overcook it. The right timing preserves its nutritional goodness in it.
  2. Another regular addition to this side dish is feta cheese, you can crumble it on top of the rice as garnishing
