Sev (fry Indian noodles) and Tomato curry is one of my preferred Gujarati dishes. Gujarati people believe in sedentary lifestyle and fond of eating. Here I am going to represent one of the famous Gujarati dishes. Many Gujarati people make this curry little bit sweet and for that they use sugar. Though I am a Gujarati, I am fond of spicy dishes and don’t prefer a sweet taste, so I am not using sugar here. In this dish, I have used chopped onions and tomatoes for making curry. In the outskirts of Gujarat, people enjoy this dish with “Bajari na Rotla” (rotla means thick chapatti and bajari means millet) and buttermilk. You can easily find sev in any Indian grocery stores. This sev can be added last, once curry has been prepared. Apart from tomato and onion; spices like- red chili powder, turmeric powder, garam masala and coriander powder are the main ingredients.

Preparation Steps for
Spicy Sev (fry Indian noodles) and Tomato Curry Recipe
|
-
Take one pan/kadai and put it on medium flame.
-
Add oil and cumin seeds. When they start spluttering, add chopped onions.

When onions become transparent, add chopped tomatoes and salt.

Simmer it for 3 minutes.

Add garlic ginger paste and garam masala.

Stir it. Add chopped green chilies, turmeric powder, coriander powder and red chili powder.

Simmer it for more 3 minutes.

Add Sev and little bit water. Adjust the salt according to your taste and simmer it for 2 minutes.

Turn off your flame. Garnish the recipe with coriander leaves and serve it.

Additional Tips:
- If you like sweet taste, then you can add sugar.
- Water can be added as per your choice. If you like thick gravy, then add little water and if you want thin gravy, then you can add more water.
- After adding sev to this dish, don't stir frequently because sev will break down.
