Chirashi zushi literally means scattered rice is a bowl of sushi rice or vinegar rice topped with assortment of ingredients and garnishes usually colorful ones. There are different kinds of scattered rice such as uncooked or cooked ingredient that is set craftily on top of the rice in a bowl. And the best thing about scattered rice is that there isn’t a fixed recipe for the ingredients, it depends on chef’s choice or picked by the customer. It is commonly eaten because it is satisfying, fast and easy to make. Scattered rice traditionally differs by region. Its often cooked for celebrating various special events, such as fiestas, birthdays, and many more because of its confetti like toppings that looks festive. It is easy to make, satisfies people’s bellies, and is a well-balanced meal. And since it contains essential nutrients that people need in a day like carbohydrates, proteins, iron and vitamins, Japanese people who are always hurried, opt for scattered rice as a quick bite to eat.
Ingredients for Scattered Rice or Chirashi Zushi Recipe
  1. Rice - 300 g
  2. Water - 500 ml
  3. Carrot - 1 pc (cut into strips)
  4. String beans - 4 pcs
  5. Shrimps - 8 pcs (peeled and deveined)
  6. Egg - 1 pc
  7. Grain vinegar - 3 tbsp
  8. Sugar - 3 tbsp
  9. Soy sauce - 1 tbsp
  10. Cooking oil - 2 tbsp
  11. Salt - 1 tsp

Preparation Steps for Scattered Rice or Chirashi Zushi Recipe
  1. Wash the rice and then soak it in 400 ml of water for about 30 minutes, afterwards cook the rice.
  2. In a pan, add the carrot and 100 ml water then let it boil for 5 minutes. Next add 1 tablespoon of sugar and 1 tablespoon of soy sauce and simmer until there is about 2 tablespoon of fluid remaining. This will be the sauce.
  3. In a small bowl, mix 3 tablespoon of grain vinegar, 2 tablespoon of sugar and 1 tablespoon of salt together. This will be the vinegar mixture.
  4. Place the cooked rice into a huge bowl, and then add the vinegar mixture and mix quickly. Add the other ingredients altogether, with the sauce in step 2 and then mix well.
  5. Let the string beans boil in salt added water and cut them into strips of 1 to 2 inches.
  6. Boil shrimps in saline water as well.
  7. Beat the egg and add little salt to it.
  8. Heat the pan, then add some cooking oil and fry the egg into a flat disc shape. Cut the fried egg into strips at about 1 to 2 inches long.
  9. Place the cooked rice in a bowl and topped it with the boiled string beans and shrimp and the egg strips.
  10. Serve and enjoy eating.
