'Saffron peas pulao' is a very simple-to-make dish. It doesn't need your valuable time in getting ready and if you are in a rush for dinner this will be the best option. In this recipe we specifically use basmati rice as they are considered best rice because of its big rice grains and special aroma. We also use many peas to make it more wholesome and nutritious; you can also include carrots if you want. Another attention-seeking factor about this dish is the spices used; it contains cloves, cinnamon, cardamom both brown ad green, salt and black peeper. So just by reading about this recipe you have gotten an idea about all its delicate flavors and aromas. As saffron is used it obtains a very eye-pleasing color and aroma. All the dry fruits used for both frying and decoration adds more nutrition, taste and beauty to this dish.
Ingredients for Saffron Peas Rice (Kesar Muttar Pulao) Recipe
  1. Saffron - 1½ cup
  2. Milk - 1/2 cup
  3. Basmati Rice - 1½ cup
  4. Fresh Peas - 1½ cup
  5. Cloves - 3
  6. Cinnamon - 2 small pieces
  7. Cardamom (brown) - 2
  8. Cardamom (green) - 2
  9. Salt - 3/4
  10. Black pepper - 8
  11. Almonds (divided in two parts) - 15
  12. Raisins - 1/4 cup
  13. Walnuts nuts (without shells) - 8
  14. Pure Ghee - 1½

Preparation Steps for Saffron Peas Rice (Kesar Muttar Pulao) Recipe
  1. PREPARATION STEPS:1) Mix saffron in milk. 2) Wash and soak rice for 30 minutes. 3) Heat oil in a utensil and fry all dry fruits except raisins till they become pink; take them out of the oil and keep them aside.
  2. MAIN COOKING STEPS: Add whole garam masalas in oil and let them roast for 1 minute.
  3. Now add little saffron milk and rice and stir gently. Now add peas, raisins, salt and three cups of water and boil them.
  4. When rice is cooked, add remaining saffron milk and cover the utensil with lid and cook for few minutes on low flame.
  5. Garnish with fried dry fruits and serve hot.
 

You can also add grated paneer or paneer cubes for decoration.
