Paneer (cottage cheese) Tikka is a very scrumptious appetizer. Mostly they are prepared in Tan door but no worries if you don’t have tan door. At home also you can make it on direct flame with holding chunks of paneer in screwier. Before holding in screwier or putting in Tan door we need to marinate paneer. You can marinate in yogurt, chili flakes, Tandoori masala, garlic paste, salt, ginger past, pepper powder and corn flour. Apart from paneer you can also make use of Capsicum, mushroom, tomato, onion, and baby corn. Now here is two choice; one is – you can marinate these list of vegetables with paneer as well and second is-Don’t marinate just directly hold them in to screwier and put on direct flame. I always prefer first option after all every has their own choice. You can also sprinkle with lemon juice and chaat masala on it. Paneer tikka conventionally serve with mint chutney and onion. While piercing these ingredients in screwier insert them alternatively.
Ingredients for Paneer (Cottage Cheese) Tikka Recipe
  1. Paneer (Fresh Cottage Cheese) - 15 medium cubes
  2. Hung curd - 3 Tbsp
  3. Red chilli powder - 1 tsp
  4. Turmeric powder - a pinch
  5. Garam masala powder - 1/2 tsp
  6. Tandoori masala - 1/2 tsp
  7. Chat Masala powder - 1/2 tsp
  8. Lemon juice - 1 tsp
  9. Pepper powder - 1/4 tsp
  10. Garlic paste - 2 Tbsp
  11. Ginger paste - 1 Tbsp
  12. Oil - 1 Tbsp
  13. Onion slice - 1/2 cup
  14. Capsicum - 1/2 cup
  15. Tomato(remove seeds) - 1/2 cup
  16. Skewers - 2
  17. Salt - 1 Tbsp

Preparation Steps for Paneer (Cottage Cheese) Tikka Recipe
  1. First hang 2 cup of curd in a muslin cloth for 1hour (that is minimum) for making necessary hung curd.
  2. Chop capsicum, tomato and onion into medium sized squares and put them in to plate. This cut vegetables are enough large to fit in skewers.
  3. Cut the paneer in to cube and put it in a bowl.
  4. Now mix these ingredients Red chili powder, Turmeric powder, Garam masala powder, Tandoori masala, Chat Masala powder, Lemon juice, Pepper powder, Garlic paste, Ginger paste, salt with the hung curd 'for the marination' and keep aside.
  5. Now add cubed paneer (Cottage cheese) in the marinated ingredients and put into refrigerated for at least an hour. Then take it out from fridge and place the paneer, capsicum, tomato and onion alternatively in skewers.
  6. Place the remaining paneer (cheese) pieces in the plate and grease with oil.
  7. Preheat the oven at 185 deg C, arrange the paneer tikkas in the baking tray and grill the paneer tikkas for 10 to12 minutes. Just turn the skewers in between to avoid burn.
  8. Your paneer (Cottage cheese) tikkas are ready, serve hot with green mint chutney and some raw onions.

Additional Tips:

  1. You can also place the paneer tikkas directly on the wire rack but with this method, be careful with the temperature as the tikkas are directly exposed to the flame.
  2. You can even marinate capsicum, onion and tomato with the marinating ingredients or just insert them raw.
  3. You can also use different color capsicums, mushrooms, baby corn and cauliflower if you like.
  4. Make sure the paneer pieces should be firm so while inserting it should not break in between.
