Tehari is a bengali favorite. It is a spicy rice dish which is cooked with meat. Unlike biriyanis, Tehari is usually cooked with vegetable oil. Tehari is widely cooked with beef, but the use of mutton is also very popular. There are many ways of preparing a tehari. This recipe is the simple and common one. There are jhal tehari, tehari polao, aloo motor tehari, murgi tehari and more. The rice in the tehari recipe must not be too soggy. It is like a polao or a biriyani, yet it is different. This recipe is very simple and pretty easy to make. Moms love to cook tehari as a cheat dish for parties, as it does not require all the hassle one needs to go through to make biriyani. Tehari is also a very available street side food in Bangladesh. It can be thought of as a pretty reasonable (cheap) gourmet delicacy.
Ingredients for Mutton Tehari Recipe
  1. Pepper seeds - 6
  2. Cardamom - 4 pods
  3. Cinnamon - 4 sticks
  4. Nutmeg - 1/2 tsp
  5. Mace - 1/2 tsp
  6. Mutton - 1 kg
  7. Cumin powder - 1 tblsp
  8. Coriander powder - 1 tblsp
  9. Oil or Ghee - 3/4 cup
  10. Onions, thinly sliced - 1 cup
  11. Ginger paste - 1 tblsp
  12. Garlic paste - 1 tsp
  13. Yogurt - 1/2 cup
  14. Green chilies - 30
  15. Rice - 500 gm
  16. Milk - 1 cup
  17. Sugar - 1 tblsp
  18. Salt - to taste

Preparation Steps for Mutton Tehari Recipe
  1. Ground the pepper, the cardamom, cinnamon, nutmeg and mace together.
  2. Cut the mutton into small pieces. Wash and dry off water. Marinade the mutton with half of the ground spices (step 1), garlic and ginger paste, yogurt and 10 green chilies.
  3. In a big pot, heat oil and fry the onions till brown. Add the marinated mutton and 3 cups of water. Stir and cover. Cook on medium heat. When the water boils off and the oil rises over the curry put in the rest of the spices. Sir and remove from heat.
  4. Pick out just the meat from the pot, leaving the oil and the gravy behind.
  5. Add 2 ½ cups of water to the pot with the oil and spices. Cover and put it on heat. Let boil. When the water comes to a boil, put in the rice, milk, salt and sugar. Keep stirring. When it boils twice, stir and cover. Cook on medium heat. After 18 minutes, put in the rest of the green chilies, then cover the pot once again, keeping a heavy object over the lid, and cook on a very low heat for a further 5 minutes.
  6. Remove the pot from heat and keep it covered for 20 minutes. Take off the cover and put in the meat into the pot and cover once again. (This step is carried out OFF HEAT)
  7. Remember to mix the meat and rice together before serving.
 
Use long grain rice to make rice items like tehari. It looks better and more appealing!
