Rezala is a traditional Bangladeshi recipe for a classic meat-based curry in curd, flavored with cardamom, cloves, garlic, ginger and chilies. Even though it has its origins in Bangladesh, it has a Mughlai influence in its taste and preparation. This dish is not one of those regular spicy curries. It has that shahi(elegant) flavor that keeps you wanting more. Mutton Rezala can be sided with plain rice, just a simple plain polao and parathas. One can serve Mutton Rezala on big, specially wedding or even small occasions.

Mutton pieces

Onion paste

Ginger paste

Garlic paste

2 tsp

Cardamom

5 pods

Cinnamon

Orange food color

Yogurt

Preparation Steps for
Mutton Rezala Recipe

In a bowl, mix all the ingredients together EXCEPT food coloring, milk, green chilies and rose water.

Marinade really well.

Heat a pot and add the marinated mutton.

Cover and cook on medium heat.

After 30 minutes, give the mutton a heavy stir. Cook more.

When the mutton is cooked/boiled, add rose water.

Remove cover, and cook till oil is visible over the curry.

When the oil can be seen, add the food color, milk and green chilies.

Lower the heat and cover. Keep something heavy over the lid, such as a mortar or another pot, so that no steam gets out and the mutton cooks in the steam on low heat. This keeps all the flavors inside and makes the dish more flavorful.

Let cook for a further 30 minutes.

Serve hot.
