Mutton Biryani is another delicious dish from land of Hyderabad. Mutton Biryani recipe is a famous Hyderabadi recipe but very popular in all part of the country and world. Here are the preparation steps for this popular and delicious Indian Hyderaba
Ingredients for Mutton Biryani Recipe
  1. Mutton - 1/2 kg, cleaned and cut into pieces
  2. Basmati Rice - 2 cups
  3. Coriander Powder - 3 tsp
  4. Dried coconut - 1 tsp
  5. Green Chillies - 3 nos
  6. garlic - 4
  7. Cinnamon - 1 inch stick
  8. Ginger - 1 inch piece
  9. Onion - 1 cup, chopped
  10. Chilli Powder - 1 tsp
  11. Peppercorns cloves - 3 nos
  12. Cardamoms cloves - 3 nos
  13. Saffron - 2 to 3 strands, dissolved in ¼ cup of water
  14. Poppy Seeds - 1 tsp
  15. Fat - 8 tbsp
  16. Curd - 1 cup
  17. Bay leaf - 2 nos
  18. Onion - ½ cup
  19. Salt - to taste

Preparation Steps for Mutton Biryani Recipe
  1. Wash the bite size mutton pieces properly.
  2. Take the curd in a bowl and marinate the mutton pieces in curd for 1 hour.
  3. Roast the cinnamon, peppercorns cloves and cardamom and make a fine powder of them.
  4. Take the red chillies, ginger, green chillies, garlic, half of the onions, and dried kernel of the coconut in a grinder and grind them.
  5. Now take the fat in a pan and heat on medium flame. When hot, add the chopped onions and mixture of above ground spices. Fry this mixture until the onions are golden brown.
  6. When the onions are golden brown, add meat to it and fry again well. When fried, add poppy seed powder too.
  7. Now, add the remaining curd and salt and cook it till the meat is tender.
  8. When the meat is tender, add the above powdered spices (cinnamon, peppercorns cloves and cardamom powder) to it and take the pan out of the flame.
  9. Take the fat in a separate pan and fry the remaining onions for 10 seconds.
  10. Now, add the cloves and bay leaf and fry till the onions are golden brown.
  11. When the onions are golden brown, add rice to it and fry for another few minutes.
  12. Add water to make water’s quantity doubled and add salt to taste. Cook until the rice gets cooked an there is no moisture left. Take out of the flame.
  13. Take a portion of cooked rice in a pan and arrange in the form of a layer. Sprinkle the saffron water.
  14. Put the layer of meat over this layer of rice.
  15. Put the remaining rice over the meat to form a layer. So, there would be three layers. Lower layer is rice sprinkled with saffron water, middle layer of meat and the top layer of remaining rice.
  16. Garnish it with fried nuts and onions and your mutton biryani is ready. Serve hot.
