You may have had this salad before without realizing that it’s a classic Italian Recipe. “Mozzarella and Tomato Salad” is called “Insalata Caprese” in Italian. Just as the title says, it’s a salad made from sliced tomatoes and slices of Mozzarella Cheese topped with basil and olive oil. For something so simple it is amazing how tasty it is. Make sure you use the best quality olive oil that you can get your hands on. And if possible, use buffalo mozzarella. Mozzarella Cheese originated in Naples Italy and was traditionally made using the milk from water buffaloes. These days it is also made from cow’s milk. Even though mozzarella cheese is high in saturated fat and calories, it is a very good source of protein and vitamin B12, phosphorous and calcium. This salad is so refreshing on a hot day.
