There is an old English treat known as Flapjacks. Flapjacks are made from oats, and syrup. Sometimes dried fruit such as sultanas may be added to the basic recipe. Americans also have a variation of this recipe which they call granola bars. I like to think of this recipe as a cross between the two. They are high fiber high energy snacks that can be eaten on the go. This recipe is a mixture of the two as it uses various dried fruits and oats. The good thing about this snack is you won’t feel guilty eating it. It is packed with healthy nourishing ingredients that will keep your energy up throughout the day. It can be packed into a tin and carried to work or to school by your children. If stored in an airtight tin they will kepp their crispness. Oats are good for the body as they are a good source of fiber and they also help control blood sugar levels.
Ingredients for Mixed Fruit Flapjacks Recipe
  1. Quick Cooking Oats - 3 ½ cups
  2. Almonds - 1 cup chopped
  3. Egg - 1 beaten
  4. Butter - 2/3 cup, melted
  5. Honey - ½ cup
  6. Vanilla Extract - 1 teaspoon
  7. Sunflower Seeds - ½ cup
  8. Flaked Coconut - ½ cup
  9. Dried Apples - ½ cup chopped
  10. Dried Cranberries - ½ cup
  11. Brown Sugar - ½ cup, packed
  12. Ground Cinnamon - ½ teaspoon

Preparation Steps for Mixed Fruit Flapjacks Recipe
  1. Preheat the oven to 350°F.
  2. Lightly grease a baking tray. Mix the oats and almonds and place on the baking tray. Toast in the oven for 15 minutes while tossing occasionally.
  3. Mix the egg, butter, honey and vanilla. Add the sunflower seeds, coconut, apples, cranberries, brown sugar and cinnamon. Add the toasted oats and almonds and stir until all the ingredients are well combined.
  4. Grease a 15 inch x 10 inch pan. Press the mixture into the pan and bake for 13-18 minutes or until firmly set and the edges have browned. Cool on a rack before cutting into bars.
 
If you are one of those people who has a strong aversion to almonds, then use any other nut in its place.
