A delicious and healthy dish, Lamb Loins with Pomegranate Sauce can be prepared for less than an hour. It’s a modern Bulgarian recipe, usually prepared for the Easter holidays. Red wine may also be used along with the other ingredients for the sauce. Lamb loins with pomegranate sauce is an excellent recipe for virtually any occasion – a casual Sunday lunch or a special dinner. All ingredients have many health benefits which makes the recipe suitable for people following almost any kind of a diet. Pomegranates are extremely rich in Vitamin C (just 100ml of juice can provide you with 16% of your daily requirement) while lamb meat is an excellent source of some essential nutrients (selenium, zinc) as well as B-Vitamins.
Ingredients for Lamb Loins with Pomegranate Sauce Recipe
  1. Lamb loins - 12
  2. Salt - to taste
  3. Black pepper - to taste
  4. Fresh onion,chopped - 1/4 cup
  5. Olive oil - 2 tbsp
  6. Fresh or canned pomegranate juice - 1/2 cup
  7. Chicken broth - 1/4 cup
  8. Vinegar - 1 1/2 tbsp
  9. Fresh thyme, minced - 1 tbsp
  10. Honey - 1 tbsp
  11. Butter, cold, cut into small cubes - 2 tbsp

Preparation Steps for Lamb Loins with Pomegranate Sauce Recipe
  1. Season the lamb loins with salt and pepper.
  2. Heat the olive oil in a pan and fry the loins until golden from both sides.
  3. Transfer the fried loins onto a preheated platter and set aside.
  4. Remove part of the oil from the pan and add the finely chopped onions. Sauté for about 1-2 minutes or until slightly brown and transparent.
  5. Add the following ingredients: pomegranate juice, chicken broth, vinegar, honey and thyme and stir. Simmer until reduced in half.
  6. Add the butter and stir until fully melted.
  7. Transfer the lamb loins into a serving platter, top with the sauce and serve.
 
Good side dishes for the lamb loins are mashed potatoes and/or steamed or sautéed green beans.
