Japanese pickles are widespread in Japan, they are often serve with rice as side dishes. Unlike the western style of preserving vegetables, Japan follows a different method. They are mostly pickled in salt or brine, miso, vinegar and soy sauce. Though pickles are easy to buy in the market nowadays, Japan always love to make their own pickled vegetables at home. And they can be in types of either hot or cold pickles. Hot pickled cauliflower is an example of pickled served warm. Cauliflowers looked really plain but they have an amazing taste especially when pickled. They are very low in fat and carbs but high in dietary fiber, folate and vitamin C. Pickled cauliflower is crunchy, sour with a tinge of the garlic that is a must in a meal, definitely worth it though it is time consuming preparing this dish.
