Firni also known as Payesh or kheer is a rice pudding, which is a traditional South Asian sweet dish. It is made by boiling rice or broken wheat with milk and sugar, and flavored with cardamom, raisins, saffron, cashewnuts, pistachios or almonds. It is typically served during a meal or also consumed alone as a dessert. Firnis which have jaggery added to it are known as 'kheer' where as the plain white one is the firni or payesh. This is a favorite bengali dessert. It is almost always served at weddings, and is a must on the muslim festive day that is on Eid day. It is a delicious dessert enjoyed by people of all age. Firni can have many variations, that is, different flavors and fruits may be added. Indians also love this dish and often serve this on their special hindu occassions. This loved dessert is an universal favorite and is equally enjoyed by all.

Pistachio, thinly sliced

Preparation Steps for
Firni (Sweet Rice Pudding) Recipe

Wash the rice and keep it soaked in water for one hour. When soft, break the rice with your hands. Drain the rice off water.

In a cooking pot, add the rice and the milk. Put the pot on heat. Add a bit of saffron in intervals and stir.

The mixture will thicken. Stir from time to time to make sure it doesn't stick to the bottom of the pot. When the mixture is thick, lower the heat and add sugar, a little by little. Stir continuously. Once you have added all the sugar, stir for a further 5 minutes on low heat. Remove from heat and add rose water.

Pour it out on a serving dish and sprinkle with pistachio. Once cool, refrigerate. Serve cold.

- Firni is naturally white in color, but some like to add a mild yelow food coloring to give it a cream color.
- You can serve this in individual small clay pots. It will give the dessert a traditional touch.
