Rice is the world’s second most popular grain. There are so many different strains of rice including black, purple, white and even red. Its uses are vast and varied including in soups, stuffed in vine leaves and even in deserts. When cooking rice, the general rule is 1 part rice to 2 parts water. Brown rice uses more water than regular white rice so follow the package instructions. Adding coconut not only enriches the taste, it also provides a great source of manganese and it is very low in sodium. Eating plain steamed rice can become monotonous so this recipe is perfect for something special. You can also add mustard seeds to this recipe. An important thing to remember is not open the lid once you switch off the heat. It’s important to leave it to steam undisturbed for a couple of minutes to get the best results.
Ingredients for Coconut Rice Recipe
  1. Rice - 2 cups
  2. Oil - 2 tablespoons
  3. Bay leaves - 2
  4. Cardamom pods - 6
  5. Cinnamon stick - 2
  6. Cloves - 4
  7. Shredded Coconut - 50 grams
  8. Hot Water - 4 cups
  9. Salt - 1 teaspoon

Preparation Steps for Coconut Rice Recipe
  1. Mix the coconut and Hot water in a jug.
  2. Heat the oil over very low heat and fry the whole spices gently for 3 minutes.
  3. Add the rice and fry in the spice and oil mixture for 2 minutes till completely dry
  4. Add the coconut water mixture and bring to the boil. Cover and simmer gently over medium heat for 10 minutes then turn off the heat.
  5. Leave it covered for another 15 minutes before taking off the lid and fluffing up the rice using a fork.
 

Serve with mutton curry, lentils or bean dishes.
