Teriyaki is one of the more widespread culinary methods of Japanese cooking. It literally translates from the word teri which means glaze/shine given by the sugar content and yaki which means grilled or broiled. So chicken teriyaki means a glazed grilled chicken. Fish is typically used in teriyaki but there are now several types using meat and chicken. The famous teriyaki sauce or marinade used for marinating and glazing is made up of mixture of soy sauce, and sweetened with sugar or honey, then they are boiled and reduced to the desired thickness. Though nowadays chicken teriyaki sauce is commercially available in many supermarkets. The chicken in teriyaki is best to use a deboned chicken thigh and with skin on, the skin is also good for appearance. This dish is served in many Japanese restaurants. A good dish best with rice. Protein and carbohydrates what better way to energize oneself during lunch.

Chicken thigh

2 pcs (deboned, with skin)

Vegetable oil

1tbsp

Sugar

3 tbsp

Soy sauce

2 1/2 tbsp

Water

100 ml

Salt

Preparation Steps for
Chicken Teriyaki Recipe

Prick the chicken with a fork or knife, by doing so it would absorb the sauce more.

Heat vegetable oil in a frying pan over moderate heat.

Put the skin side of the chicken onto the frying pan first and fry it until the skin becomes brown and the top side is pinkish but the edges are turning white.

Now, flip the chicken over so that the pinkish flesh side of the chicken is now facing the pan. Fry it until the that side of the chicken becomes white. Always wipe off the oil that emanates out of the chicken with tissue paper.

Add water and bits of salt, cover the frying pan and let it simmer over low heat.

And when the chicken is cooked, add sugar and soy sauce and let it simmer again over low heat. Turn the chicken occasionally to even the cooking of the chicken.

The dish is cooked when the sauce becomes thick.

Cut the chicken when it cools down enough to be touched.

Place the cut chicken in a dish. Then pour the sauce, from when the chicken is cooked, over the chicken.

Tips:
For a different sweet taste for the teriyaki sauce, sugar maybe replaced by honey or pineapples.
