Button Mushroom clear soup - This is very tasty and sour kind of soup. Real taste of soup can be enjoyed, when it is warm. There are two types of soups present - thick and clear soup. Here I have made clear soup with using button mushroom. You can also add many ingredients with mushroom to make your soup healthier. You can use tomatoes, bell peppers, baby corn, olives and zucchini. If you would like to have non-vegetarian version, then you can use small cooked chunks of chicken. Soup will not give much trouble to your digestive system. Mushroom is the most important ingredient in this soup. There are many types of mushrooms exist. If fresh mushrooms are not available, then you can also use canned mushrooms. In India, mushrooms are more cultivated in winter. There is no cholesterol in mushroom and it is full of vitamin B complex. Mushroom can be used for medical purpose. It has anti-fungal and anti-bacterial properties.
Ingredients for Button Mushroom Clear Soup Recipe
  1. Tomato - 1 cup
  2. White soy sauce - 3 Tbsp
  3. Lime juice - 4 drops
  4. Fresh cilantro - 1/4 cup
  5. Salt - 2 Tbsp
  6. Black pepper powder - 1 tsp
  7. Small Thai chilies - 5 piece
  8. Button Mushroom - 1 cup
  9. Lemon grass - 1/4 cup
  10. Roasted garlic - 3 cloves
  11. Ginger paste - 1/2 tsp

Preparation Steps for Button Mushroom Clear Soup Recipe
  1. Take sauce pan and put it on high flame. Add water and bring it boil.
  2. Squash the cilantro and lime grass with pestle on cutting board. Add them in the water.
  3. In the meantime, roast 3 to 4 cloves of garlic and chopped it with knife.
  4. Add this roasted garlic and ginger paste to boiling water.
  5. Put your water on medium flame and boil it till you can smell nice aroma.
  6. Now your soup will develop very light green color.
  7. At this stage add mushrooms, green chilies, salt, black pepper powder and white soy sauce.
  8. Add tomato and boil soup until mushroom become tender.
  9. Turn off your stove and take out your pan from flame. Transfer it into a soup bowl and add fresh drops of lime juice. Garnish it with cilantro.
  10. Serve warm.
 

Additional Tips:

  1. If you want, you can use other type of mushrooms like shiitake or oyster mushroom.
  2. You can use sugar, if you prefer somewhat sweet taste.
