Bulgarian tortilla is a light and delicious meal prepared with potatoes and eggs. It is an easy to cook yet great dish that is suitable for lunch or dinner and even breakfast. It can be served hot or cold and there are various side dishes that go well with it. If you are eager to prepare it during the summer, serve Bulgarian Tortilla with fresh vegetable salad. Besides the fact that this Bulgarian tortilla recipe is easy to cook, it also has numerous health benefits. Regardless of the cooking method, potatoes are very beneficial for health because they contain two of the most important vitamins for the human body – vitamin C and vitamin B6. Furthermore, potatoes contain a number of nutrients with good antioxidant properties which act against the harmful free radicals.
Ingredients for Bulgarian Tortilla Recipe
  1. Potatoes - 1/2 kg
  2. Eggs - 2
  3. Thyme - 1/2 tbsp
  4. Salt - 1/2 tsp
  5. Black pepper - 1/2 tsp
  6. Olive oil - 1

Preparation Steps for Bulgarian Tortilla Recipe
  1. Wash and peel the potatoes. Cut into medium sized cubes and boil in salted water.
  2. Once ready, drain and mash slightly with a fork.
  3. Lightly whip the eggs in a bowl and mix with the mashed potatoes. Add thyme and black pepper and mix well.
  4. Heat the olive oil in a medium sized pan. Pour the mixture into it and slightly press with a spoon to form a pancake like shape.
  5. Fry for 7-10 minutes. Carefully turn “the tortilla” to cook the other side and fry for another 3-5 minutes or until golden brown from both sides.
 
Potatoes skin is a good source of nutrients itself. If you'd like to reap out the full health benefits of this meal, avoid peeling the potatoes; scrub them under running water instead and cook them with the skin.
