Preparation Steps for
Bulgarian Tortilla Recipe

Wash and peel the potatoes. Cut into medium sized cubes and boil in salted water.

Once ready, drain and mash slightly with a fork.

Lightly whip the eggs in a bowl and mix with the mashed potatoes. Add thyme and black pepper and mix well.

Heat the olive oil in a medium sized pan. Pour the mixture into it and slightly press with a spoon to form a pancake like shape.

Fry for 7-10 minutes. Carefully turn “the tortilla” to cook the other side and fry for another 3-5 minutes or until golden brown from both sides.
