Khichuri is a typical Bengali rice based item. It is made with cooking rice and dal (lentil) together alongside certain spices. It is a very common food which is usually consumed for comfort or as an everyday staple item. Bengalis love to eat Khichuri during the rainy season accompanied with different Bhartas and Goru Bhuna (beef curry). Indians also enjoy Khichuri just as much. Hindus serve this dish during pujas as well. The Indian Khichuri and the Bangladeshi differs quite much. Indian Khichuri is coked till soft whereas Bangladeshi one is cooked till just done. Of course, Bengalis also eat soft Khichuri. There is Bhuna Khichuri (which is the dry one), and there is also Shobji Khichuri (vegetable Khichuri). A very soft version of Khichuri is usually given to ill people so that they get nutrition as well as it is easy to digest. The soft Khichuri is also fed to infants.

Preparation Steps for
Bhuna Khichuri Recipe

Wash rice and lentil with water and drain.

In a karai, heat the ghee. Add the rice, lentil, clove, bay leaf and cinnamon and fry for 2 minutes.

When fried, add 5 cups of water, salt and stir. When the water will come to a oil, cover, lower the heat and let simmer for 20 to 22 minutes.

When cooked, serve out in a dish.

- One can add 3/4 tsp of turmeric powder, chili powder and green chilies to this recipe in order to make the dish colorful.
|
