Beef tenderloin sautéed soup or lomo guisado is a Filipino dish that is so easy to cook and often serve on Sundays and special occasions. It originated in the Visayan region of the southern part of the Philippines. And in those ages, carabao or water buffalo meat is used instead of beef for this dish and fresh blood was added. But nowadays many people think that if carabao meat is used in any dishes, it would just mean that it is substituted for beef because it’s cheaper. They actually don’t taste the same but close enough. Tthe tenderloin part is still used for this recipe, and as the name suggest it is tender. Probably because it is the most less used part of the beef, it is called the finest part. It is easy to cook and very flavorful so no need to add too many spices. Beef tenderloin sautéed soup isn’t like the dish in the West where all that is done to tenderloin is roast and steak. Making a simple soup from it is what Filipinos love to do on good meat and it has many proteins.

Beef tenderloin

Onion

2 pcs (chopped finely)

Ginger

1 tbsp (julienned)

Garlic

5 cloves (minced)

Beef stock
-
6 cups

Cooking oil

3 tbsp

Soy sauce

1/4 cup

Salt

Preparation Steps for
Beef Tenderloin Sauteed Soup (Lomo Guisado) Recipe
|

In small sauce pan, heat cooking oil and sauté ginger until fragrant.

Add and sauté also garlic, onions and tomatoes on low heat for 7 minutes.

Stir in beef slivers and soy sauce. Flavor with salt and pepper then stir and press with the back of a ladle.

Pour beef stock 1 cup at a time and boil for 30 to 40 minutes or until beef is cooked through. Remove the scum that rises on top.

Transfer to a serving bowl and pour ample broth to cover the beef strips.

Serve hot with steamed rice.

Tip: It is very important to press the meat strips in the saucepan with the back of a ladle, the beef juices are pressed out and merge into the broth giving the broth more flavor and the meet strips becomes tender.
