Baingan (Mashed Eggplant) Bharta- is a very famous recipe of Panjab, India. There are two variations of making Bharta. One is the traditional way and second is the modern way. I have prepared like Modern way here. In the traditional way people used to roast brinjal first on charcoal or directly on the flame. After that they remove the burnt skin and mashed it. In modern way people usually boil the brinjal with potato and they are mashed with a potato masher. Apart from potato, onion and tomato puree can be added to make eggplant. Spices can be added are; turmeric powder, coriander powder, garam masala, garlic- ginger paste, green chili and salt. In Panjab people love to add extra ghee or butter pour on it. Generally this Bharta can be served with Naan ( Indian flattens bread) or chapatti and buttermilk. Traditionally people enjoy this Bharta with chopped raw onion and fry green chili in India.
Ingredients for Baingan Bharta (Mashed Eggplant) Recipe
  1. Medium sized brinjal (eggplant) - 1 in number
  2. Large potato - 1 in number
  3. Oil - 2 Tbsp
  4. Cumin seeds - 2 tsp
  5. Chopped onion - 2 cups
  6. Chopped tomatoes - 2 cups
  7. Chopped green chili - 2 Tbsp
  8. Salt - 2 Tbsp (as per taste)
  9. Turmeric powder - 1 tsp
  10. Red chili powder - 2 Tbsp
  11. Garlic paste - 2 tbsp
  12. Ginger paste - 1 tsp
  13. Fresh coriander leaves - For garnishing
  14. Coriander powder - 2 tsp
  15. Cumin powder - 2 tsp

Preparation Steps for Baingan Bharta (Mashed Eggplant) Recipe
  1. In pressure cooker add enough water and put it on high flame.
  2. Add potato, eggplant and little bit salt. Cook until 2 whistle.
  3. Now Let the cooker cool for some times and remove skin of potato and brinjal and drain extra water.
  4. Now take one bowl and in that mash brinjal and potato nicely. Keep aside.
  5. Now heat the frying pan on medium flame. Add oil, once the oil is heated properly add cumin seeds.
  6. When cumin seeds start spluttering add chopped onion and simmer it for 5 minutes.
  7. When onion becomes soft and transparent in color and chopped tomato and again simmer it for 5 minutes.
  8. When onion and tomato mix with each other nicely add garlic=ginger paste, red chili powder, turmeric powder, coriander powder, cumin powder and salt.
  9. Mix them properly and cook for more 5 minutes. Stir in between.
  10. Now turn off the flame and take out your Bharta in serving plate.
  11. Garnish it with chopped green chili and chopped coriander leaves. Your delightful Bharta is ready to serve.
 

Additional Tips:

  1. You can also make this tasty Bharta by using the traditional way, means of roasting your brinjal on charcoal instead of boiling in pressure cooker.
