Hard to believe but a crostini is just a thin slice of bread from a baguette. It is normally toasted then covered with various toppings. A good quality piece of bread makes for better crostinis. You can use white or wholemeal bread or even use slices of cheese bread for added flavour. Crostinis make an ideal bite to have for guests before they sit down for dinner. They can also be served at a party when you don’t intend to have an actual sit down dinner. You can make various different fillings, arrange them on platters and serve in place of food. The topping and even the crostini slices can be made ahead of time. Add the avocado at the last minute to prevent it from changing colour. If you do not like goat’s cheese then you can substitute it with the same quantity of feta cheese or any other semi hard cheese you prefer.
Ingredients for Avocado and Goat’s Cheese Crostini Recipe
  1. Large Baguette - 1, sliced thinly
  2. Garlic Clove - 1
  3. Extra Virgin Olive Oil - 2 tablespoons
  4. Ripe Avocado - 1, peeled and diced
  5. Soft Goat’s Cheese - 100 grams
  6. Lemon Juice - 1 tablespoon
  7. Fresh Basil - 1 tablespoon, chopped
  8. Red Onion - 1 tablespoon, chopped
  9. Salt and Freshly Ground Black Pepper - 1/2 teaspoon each

Preparation Steps for Avocado and Goat’s Cheese Crostini Recipe
  1. Preheat the oven to 180°C.
  2. Brush the slices of bread with olive oil and bake in the oven till crisp and golden brown. Remove, rub with the garlic all over and let it cool.
  3. Using a fork mash the avocado together with the goats cheese.
  4. Mix in 2 tablespoons of olive oil, lemon juice, onion and basil. Season the mixture well with salt and pepper.
  5. Top each toasted bread slice (crostini) with the avocado mixture and serve on a platter.
 
Serve these immediately because the avocado will start to brown once it stays out in the open for too long.
