Pickles and jams are consumed in every home. The word 'Pickle' is coined from the Dutch word 'Pekel' which means to Brine. It is the resulting food of pickling, also known as brining. Pickling is a way of food preservation by anaerobic fermentation. This process gives food sour and salty taste plus it can preserve perishable food for months. Pickling began in India 4000 years back with cucumber. It is called 'achar' in northern India. It increases food value through Vitamin B produced by bacteria.
Jam contains both juice and flesh of the fruit or vegetable. Accurately, the term "jam" is the food made with whole fruit, cut into chunks or mashed. The fruit is cooked with water and sugar to stimulate the pectin in it. The mixture is then put into jars for storage. Even consistency is the character of good jam with shiny color, semi-jelled texture & with no liquid and chunks. Jam can be made from any fruit or veggie. It is not only can be used in cakes and pastries rather than eating with bread.
